Summer Veggie Medley Pasta
Serves 1
1-2 medium carrots, cut into large chunks
½ bell pepper, seeded and cut into large chunks
1 medium-large zucchini, cut into large chunks
1 large heirloom tomato, cut into large chunks
1 garlic clove, smashed
3 tablespoon Parmesan cheese, grated
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
A pinch of sugar
1 packed tablespoon fresh basil leaves
10 ounces pasta, cooked al dente according to packaging
In a large blender or food processor, mix everything but the noodles together. Blend until there are no more large chunks in the sauce. This can take 1-2 minutes of continuous blending. Taste and adjust seasoning to preferences.
Pour the sauce over your pasta and mix until the sauce has been evenly dispersed.
